François Belin appointed Head Sommelier at the Swan
New Head Sommelier at the Swan François Belin, 27, has been appointed to the new post of Head Sommelier at the iconic 15th century Swan at Lavenham in the heart of Suffolk.
Formerly Assistant Head Sommelier at London’s five-star Goring Hotel, he has ambitious plans to take The Swan’s wine offer up to a higher level.
Previously François has worked at Hambleton Hall, Oakham but the majority of positions have been in his home country of France including such quality establishments as the Grand Hôtel de Cala Rossa, Porto-Vecchio, a Relais & Châteaux member. He has also held a sommelier position at the Nottoway Plantation in Louisiana.
The Swan offers outstanding cuisine in its elegant AA two rosette Gallery Restaurant as well as the informal contemporary-style Brasserie. Working with the hotel’s Head Chef Justin Kett, François will be sourcing wines from across the globe to complement specific dishes and hosting themed wine tastings for hotel guests.
Steeped in history, the half-timbered Swan is a charming, quintessentially English hotel, set in the heart of one of the country’s best preserved Tudor villages. Its ancient oak beams and inglenook fireplaces blend effortlessly with the mix of classic and contemporary furnishings.
