Working with the hotel’s Head Chef Justin Kett, François sources wines from across the globe to complement specific dishes.
François Belin, Head Sommelier at the iconic 15th century Swan at Lavenham in the heart of Suffolk, formerly Assistant Head Sommelier at London’s five-star Goring Hotel, he has ambitious plans to take The Swan’s wine offer up to a higher level.
Previously François has worked at Hambleton Hall, Oakham but the majority of positions have been in his home country of France including such quality establishments as the Grand Hôtel de Cala Rossa, Porto-Vecchio, a Relais & Châteaux member.
The quest to find the perfect wine to pair with a particular dish will go on forever. Our Sommelier François hosts regular wine tasting dinner events to reflect this.
